Quick-Mix One-Egg Cake - Scott Lithgow

1/3 cup butter, margarine, or shortening
1 ¼ cup sifted cake flour
¾ cup sugar
1/2 tsp. salt
2 tsp. baking powder
½ cup milk
1 tsp. vanilla
1 egg, unbeaten

Preheat over to 375 degrees. Grease and flour the bottom of the baking pan (8 in. square or round). Put the fat into a large mixing bowl and stir until it is soft. Sift dry ingredients together and add to the fat. Don’t mix. Add the milk and vanilla and stir until ingredients are mixed. Then beat 150 strokes with a spoon or for 1 minute at high speed with a hand mixer. Add 1 egg to the batter and beat 150 strokes or 1 minute. Pour into prepared baking pan and bake for 25 minutes.
