2 ½ lbs. chicken pieces
1 cup flour
2 tsp. salt
¼ tsp. pepper
2 tsp. paprika
½ cup butter or margarine
1 small clove garlic (or ½ tsp. garlic powder)
2 T minced onion (or ½ tsp. onion salt)
1/2 tsp. pepper
1/2 tsp. thyme
1/4 cup vegetable oil
1/2 cup lemon juice
Dip the chicken pieces in mixture of flour, salt, pepper and paprika. Melt butter in a shallow pan in oven at 400 degrees. Turn chicken pieces to coat with butter and bake, skin side down, in a single layer for 30 minutes. Turn the chicken over and pour remaining ingredients, which have been mixed together, over the chicken. Continue baking for 30 more minutes, or until tender. Serves 4.
