Carrot Cake - Barbara Lithgow Chase

Combine:
1 cup sugar
2 eggs
2/3 cup oil

Add:

1 cup flour
½ tsp. soda
½ tsp. baking powder
¼ tsp. salt
1 tsp. cinnamon

Mix together and add:

1 ½ cups grated raw carrots
1 tsp. vanilla

Pour into 8 inch square or round greased pan. Bake at 350 degrees for about 35 minutes. Cool and frost.

Frosting:
2 T butter
1 ½ cups powdered sugar
3 oz. cream cheese
1 tsp. orange juice
