Meat Loaf - Winifred Armstrong Danielson

1 lb. ground beef
½ lb. ground pork—unseasoned (can use all beef)
1 ½ tsp. salt
a little pepper
3 T brown sugar
1 medium onion—chopped & ¼ cup chopped celery (optional) sautéed in butter
1 egg
½ cup tomato juice (or sauce) and a little catsup
½ cup cream (or milk)
20 crushed soda crackers

Mix all ingredients thoroughly. Shape loaf and place in greased roaster. Add 1 T of water to the pan. Cover and bake for 1 hour at 350 degrees. Uncover. Dribble catsup over top of loaf and bake for another 30 minutes.
