Beef Stew - Marian Danielson Pearson
Roll 1- 1 ½ lbs. beef cubes in 2 T flour seasoned with salt and pepper. Brown in 2 T shortening in deep, heavy pan. Add 1 can tomato soup and 1 soup can of water. Cover and simmer for 1 ½ hours, stirring occasionally. Add 6 onions, 6 carrots and 3 potatoes. All vegetables should be quartered. Cover and cook for 1 additional hour, or until vegetables are tender. To thicken, cook uncovered for the last 10 minutes.
